This recipe was the first one listed in the first edition of the Tracy’s Christmas cookbook. So began an annual tradition that celebrated 20-years of recipes in 2018.

I have no idea the origin of this recipe. This recipe has been in our family for years as I remember from my youngest years Mom making them. The photo I used was the best representation of these treats.

Many thanks to my sister, Tracy, for starting this and shepparding it through all the years!

Ingredients

  • 2 eggs
  • 1/2 cup milk
  • 1-1/3 cups flour
  • 1 Tablespoon sugar 1teaspoon baking powder 1 teaspoon salt
  • 2 teaspoons oil
  • 2 cups com, drained

Directions

  1. Beat the eggs and mix with the milk and oil. Mix dry ingredients together. Add dry ingredients to egg mixture. Add the com to all of this. Very carefully, deep fry by spoonfuls.
  2. To serve, slather margarine or butter all over each fritter. They are easy to eat as you are frying them but are also fabulous the next morning.
