Carolina Pimento Cheese Chicken Salad

This is some excellent tasting chicken salad. The original recipe is from Cook’s Country and was published in 2007. As our norm, Colleen took the base recipe and adjusted it to our liking.

The recipe calls for cayenne pepper. Some may be hesitant to add it but we recommend not eliminating it. The small amount doesn’t add heat but does provide a subtle flavor that really makes all the difference.

This works well to serve on top of a salad, make a sammie, or put it on crackers while you enjoy a beverage at the end of your day!

Ingredients

½ cup shredded cheddar cheese

1 stalk of celery, chopped

½ cup mayonnaise

1 small jar pimentos, chopped and drained

2 tablespoons sour creama

2 tablespoons lemon juice

1/8 teaspoon cayenne pepper

1 garlic clove , minced

2 to 3 cups cooked boneless, skinless chicken breast

Salt and pepper to taste

Directions

  • We shred the chicken by using our KitchenAid mixer. Break each chicken breast into a couple of smaller pieces. Toss into the mixer bowl with the paddle blade. Turn on low and let run until the desired level of shredding, about 45 seconds to 1-minute.
  • Combine cheese, mayonnaise, pimentos, sour cream, lemon juice, cayenne, and garlic in a large bowl. Add chicken and toss until coated. Season with salt and pepper. Serve or cover and refrigerate for up to 2 days.

My sister Wanda submitted this one for the 2019 edition of our family recipe collection. I’ve made chicken cordon bleu in the past but never with this methold. Sure looks to be way easier than rolling up each chicken breast. I also like the dijon parm sauce that’s included in the recipe. This is one I’m going to try!

Chicken Fried Rice

I enjoy fried rice. This recipe is from Seonkyoung Longest and is a good one. I’ve slightly adjusted it to add in a few more veggies and a hint of sesame oil.

It comes together quickly so makes it perfect for a quick, delicious, and satisfying dinner (or lunch!). Enjoy!

This easy Chicken Cordon Bleu is from Skinnytaste. We’ve adopted it to the point it’s really not the skinny version. Oh, well! It’s still a family favorite stuffed with ham and melted cheese.
 
Baked, not fried and easy to make, no toothpicks required!
 
Total Time:  35 minutes
Prep Time:  10 minutes
Cook Time:  25 minutes

INGREDIENTS:

  • Cooking spray
  • 12 thin sliced (36 oz total) skinless boneless chicken breasts, 3 oz each
  • salt and fresh cracked pepper
  • 3 large eggs
  • 1 tbsp water
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne
  • 5 oz (6 slices) thinly sliced lean deli ham, sliced in half
  • 6 slices (4.4 oz)  Swiss cheese, cut in half or use a rectangular chunk of swiss for each
